- The Guy distillery also produces Pontarlier Anis, the only aperitif based on distilled green anise.
- François Guy was one of the first to restart producing distilled absinthe. In 2001, he planted 55 000 plants of absinthe. The new crop was harvested at the end of September and dried during October. The first litres were on sail on the 15 of December 2001.
- François Guy absinthe participated at the 2007 Absinthiades were it won 4th place.
The Guy distillery was founded in 1890 by Armand Guy. Until 1914, it produced an absinthe which made Pontarlier famous.
François Guy, the great grandson of Armand Guy, took over the distillery and thanks to a change in the European legislation, started distilling François Guy absinthe on 15th December 2001.
- At first, savour François Guy with half a piece of sugar. Then add more or less according to your taste.
- For one measure of absinthe (3cl), add 2 to 5 measure of fresh water.
Founded by Armand Guy, this absinthe distillery is the last family-owned business in Pontarlier, where four generations of distillers have practised their art since 1890.
In addition to absinthe and Pontarlier-Anis, the Guy distillery also produces traditional liqueurs, eaux-de-vie, aperitifs, and preserved fruits.

Not too laborious or overly complex like some of the "high end" absinthes - this one is simple and at the same time real enjoyable one. A great after work or summer evening drink that leaves you wanting for more. Will buy again for sure!

An essential staple for ending a bigger evening on the absinthe so that you don't "burn" all of the much more pricey high quality stuff in your collection!

Added on the : 22/02/2018 EnglishAs a relative newcomer who has tasted only a few good absinthes and been trapped by a couple of imitations, pardon me if I keep my language simple! As a beginner I always cautiously dripped water through a sugar cube, not being very keen on strong bitterness. This absinthe had an intriguing aroma and taste, the anise clear but not overwhelming, and the sugar offset the bitterness. I detected what I would describe as an interesting earthy taste as well. I tried it without sugar to distract, and was glad I did. I found a blend of tastes, none ovewhelming. I also took it with a little less water (a half finger below the upper mark on a Pontarlier glass) and enjoyed that. If I'd more experience with other absinthes my star rating might have gone another way, but my three stars is cautious, and I considered four.
