Green Velvet and the Dock11 series of absinthe have their origins in the birthplace of the green fairy. A misty Swiss valley called the Val-de-Travers, where just a handful of former bootleggers now openly distil absinthe. And these are the makers of Green Velvet and the Dock11 series.

The Dock11 series is a well-curated selection of the finest of the Val-de-Travers absinthe, both classic Swiss absinthe and new innovations. The series includes Wolfsmilch and Zeitgeist, which were created in collaboration with the late H.R. The flavour is so big, rounded and delicious, whilst also being so delicately blended, that the subulties of this masterpiece take time to unfold with every sip. It is my honest opinion that to use sugar with this should be considered an act of sacrilege as there are some momentary flashes of sweetness that dance with the bitter tones, and all of the other intricacies, of this thoroughly amazing creation. It is expensive, but you get what you pay for...

Simply looking at the bottle's label made me think it really belonged in the Novelty Absinthe category. How ignorant and stupid of me to judge a book by it's cover. This absinthe was delicious!!! It will louche almost right away. A fountain with a slow drip will really let you appreciate the mesmerizing cloud that emerges. It also allows you to see the fine oil layer that emerges at the top. The taste - classic. Well balanced all around. Great herbal flavors and a nice slightly bitter wormwood finish that is still easy on your palate. I used three parts water to 1 part absinthe, which seemed perfect to me. Tried it with and without sugar. The sugar was OK, but there is actually just enough natural sweetness that I actually preferred it without the sugar! This would be an absolutely perfect absinthe to introduce to someone new. Aficionados might enjoy the classic taste. One caution - don't let this little bottle fool you. It really seemed to work wonders on my head!! It packs a punch. I've tried many types of absinthes. Some go down well, others can potentially knock me on my butt. This one seems to be one of those!! Everyone is different so drink carefully and enjoy. HIGHLY RECOMMENDED!

Added on the : 27/04/2016 EnglishMore often than not, on this website the reviews seem to live up to the hype. Especially true with this particular absinthe. Often times I think ranking some of the best of the best is tough, and people have different palates. Whatever your palate, this absinthe ranks a minimum of the King of Diamonds, but is most likely an Ace. You won't find many in this league. This is perfect balance with no one flavor overwhelming. Smooth as can be, with a taste that has you going for more. This selection is pricey (being that it comes in an .5 liter bottle as opposed to the standard .7 for the same price) and its obvious now what the reason is. Does everyone want to drink absinthe this good all the time? Obviously not. But for those making a habit of seeking to add the best in their collection, this verte will knock your socks off.

Added on the : 11/08/2015 EnglishSmooth and sweet with a balance of punchy herbs going on. Anise is well present, nice level of numbing left for those who appreciate that. Not overwhelming though. I would cry if i couldn't get a steady supply of this. Its perfection in many ways.

Added on the : 09/01/2015 EnglishI have tasted 20 different (Best) Absinthes and to me, this is the best of them all. It is absolutely delicious. I use 3.5 to 1 dilution with a superb water and for me, never sugar. The taste is spectacular. I hope he decides to continue production, so that it is available.
