Caves Bourdy are the oldest producer in the region, with a direct family line going back to the 16th century. Their cellars contain the oldest collection of vintage Château Chalon and Cotes du Jura in existence, with some wines going back to the 19th and even 18th century.
We work exclusively with Jean-Francois Bourdy to
occasionally make limited numbers of these irreplaceable old vintages available to discerning collectors. All wines come direct from Bourdy's cellar to our own, and so are in perfect mint condition.
The best grapes are actually picked the day before the general harvest in order to produce this unique wine. These are then left to hang dry for three to four months. This wine is made from three different types of grapes: Savagnin, Chardonnay and Poulsard. During the pressing of the grapes, only 10 to 15 liters of wine are extracted from 100 kilograms of grapes. During its three-year long aging process, the wine develops its relatively high sugar content of between 70 and 110 grams per liter and therefore can be described as a liqueur-like wine. This rare wine is unique and is only sold in 375 ml bottles.
In order to allow the wine to breathe and develop its full bouquet, we recommend opening the bottle two to three hours before consuming. This subtle wine is best enjoyed slightly chilled, at a temperature of between 13 and 15° Celsius. Vin de Paille is typically served to accompany dessert, and can be saved and let to age for over one hundred years! This special wine from Jean Bourdy exemplifies a remarkable balance between honey, candied exotic fruits and acidic flavors.
