Caves Bourdy are the oldest producer in the region, with a direct family line going back to the 16th century. Their cellars contain the oldest collection of vintage Château Chalon and Cotes du Jura in existence, with some wines going back to the 19th and even 18th century.
We work exclusively with Jean-Francois Bourdy to
occasionally make limited numbers of these irreplaceable old vintages available to discerning collectors. All wines come direct from Bourdy's cellar to our own, and so are in perfect mint condition.
Our Côte du Jura Blanc (white) consists exclusively of Chardonnay. This type of grape was already being grown in the Jura in the 16th century and was also distinguished as a "fine plant” at that time. After natural fermentation (without added chemical yeast), the wine is filled in old oak casks of various sizes – 300, 600, 800, and 1200 liters.
Just like the Côte du Jura Rouge, this white wine remains for at least 4 years in the cask so that it can develop the distinct characteristics of the region. This aging process in cool cellars allows the wine to develop the correct balance and also enables it to be enjoyed immediately after it has been bottled. That is, however, only one way to enjoy a wine that will refine and develop over the next 100 to 150 years. After bottling, the wine remains in constant contact with open air for the next year, without a yeast film developing like in the case of vin jaune.
During the bottling process, Côte du Jura Blanc undergoes no clarification processes – only one fine filtration in order to produce a crystal-clear wine. The 2 to 3 milliliters of sulfite per liter present are more than sufficient.
Open the bottle a few hours before the first tasting, and drink at an optimal temperature between 15 and 18° Celsius. We recommended serving this wine with the following dishes: warm appetizers, cheese fondue, mussels and fries, seafood, fish served in sauce, smoked fish, sauerkraut, and cheese. You can let this wine age for an entire lifetime (100 to 150 years), but after one taste you won't want to drink anything else for the rest of your life!
