Henrik Larsson has worked at Sankta Annas Bränneri AB, former Valkyria Distillery - a small distillery located in Stråssa, Lindesberg, near Stockholm - to bring to life the very first Swedish distilled absinthe - Absinthe Valkyria!
Henrik has this to say about the challenges faced to distill a genuine absinthe in Sweden:
"Opening business in february 2011 and launching the first product in November 2011, makes Valkyria Distillery the fastest company in the history of Sweden to obtain all the correct certification and permits involved in food production containing alcohol.
Valkyria Absinthe is the only alcoholic product in Sweden that used to be made in a church (Saint Anns church of Strassa), it is also the first absinthe to be legally distilled in Sweden AND no other product produced in Sweden have a higher content of alcohol. Henrik Larsson recently moved the distillery into new premises
To do all this "at one time" in Sweden, one of the most regulated countries in the western world, the recipe for Valkyria required two secret ingredients: Swedish precision and fierce northern passion. Or, as we put it in Sweden "A continental trend with Swedish quality".
Due to the large amount of herbs used, please add a little bit more water than you have in other absinthes - for a cooler taste that lasts longer."
- For one measure of absinthe (3cl), add 3 to 5 measures of chilled water.
Louche: instant and milky.
Taste and mouthfeel: this is definitely a thick absinthe! Both star and green anises are in the Valkyria and both take control of the palate immediately. Once they have settled down you can really fully enjoy all the quality herbs with lemon balm, wormwood and fennel being the most dominant in mouth.
Finish: very long, hard to drink a "lighter" absinthe after the Valkyria.
Overall: this is honestly a good absinthe, its texture and warmness makes it a very pleasant drink for cool evenings. The floral notes could be even more upfront by reducing the star anise a bit but for a first attempt in the all new Swedish absinthe market, we think the people behind Valkyria deserve to enter the family of quality-made absinthes.
Makers of the first Swedish absinthe! The Valkyria Distillery is a youthful distillery. Starting out in 2011 in a disused church and going by the name 'Sankta Annas Bränneri', this is a true absinthe micro-distillery, with distillation, bottling and almost everything being carried out by owner Henrik Larsson. A lot of love goes into these spirits.
Absinthe Valkyria was the first legal Swedish absinthe, and since it has been launched has gained lots of fans, and been awarded a respectable number of medals in international spirits contests.
The distilleries other absinthes are also unique: Absinthe WOLF, light on anise, still very drinkable indeed. A collaboration with the heavy metal band of the same name. And Midvinterblot, an amber absinthe, with cinnamon and Swedish winter spices - unique!

This is an Absinthe just in my taste.
It´s not an thin chemical kind of Absinthe, it really has something to say when you taste it. Love it both straight and with water.
No need at all to add suger.
Highly recommended!

Wow, this is the worst absinthe I've tasted in years! I'm not the reviewing type and I don't like to be negative but I really need to complain about this one.
When I opened the bottle the cork had a nasty bright green coloring which makes me believe this absinthe is artificially colored.
If you drip the water really, really slowly there is a weak louche, but it's surely no louche to watch and admire.
The taste reminds me of cheap Czech absinthes which are pretty dull and uninspiring.
All in all I think this is not a distilled product, but an artificially colored and flavored oil mix.
Maybe this is usable for mix drinks, but because I don't use absinthe this way I threw it away after drinking two glasses.
Horrible! Be warned!!

It is a full flavored smack upside the head. After you get past the initial blast of flavor there are plenty of subtle notes working on the front end and the back end of the tast. I found no need for sugar, just a good mix of super chilled (I like sparkling) water. It actually goes well with loud rock and roll... Hmmmm....
34 Sugar cubes for all absintheurs in love with sugar!
Sugar isn't always the same - some sugar cubes you can buy at your local super market may have been pressed together too tightly, and won't easily dissolve when you drip water over them. This is why these sugar cubes are ideal for the French ritual - especially ...
