Caves Bourdy are the oldest producer in the region, with a direct family line going back to the 16th century. Their cellars contain the oldest collection of vintage Château Chalon and Cotes du Jura in existence, with some wines going back to the 19th and even 18th century.
We work exclusively with Jean-Francois Bourdy to
occasionally make limited numbers of these irreplaceable old vintages available to discerning collectors. All wines come direct from Bourdy's cellar to our own, and so are in perfect mint condition.
Three different types of grapes are blended in order to produce Côte du Jura Rouge (red wine): poulsard, trousseau, and pinot noir grapes. These grapes mix together in the same tub for 12 to 15 days, and the mash is pumped upwards twice a day to mix the pomace. This procedure is necessary to extract the colors and aromas of the grape juice. After this malolactic fermentation is completed, the wine is filled into 15 to 60 year-old oak casks with a capacity of between 1000 and 1500 liters. Using casks of this size is important to ensure that no wooden flavor is transferred to the wine.
With the wines that come from the Jura, there is always a noticeable sense of being able to taste and smell the territory and its climate and conditions. This wines are aged in old, cool cellars for 4 years until the ripening process is finished. Only after a year are the wines then bottled, since these especially young wines are still sensitive to changes in their surroundings. In the following years these wines can still be seriously affected by contact with air.
During the bottling process, the wine undergoes no refining processes to clarify it or to provide more bio-chemical stability. Only a light and mild filtration is used in order to produce clearer wine. Otherwise, the wine contains just a few milligrams of sulfite per liter, also typical of the wine produced by the predecessors in the Jura region since 1850.
This method makes a balanced and pleasant wine easy to achieve, which can be consumed immediately. The character of the wine is already pronounced even when young, with light nuances in the flavor reminiscent of an already aged wine. Thanks to the extensive and slow ripening process, this wine can survive 80 to 100 years after its production and will continue to develop striking new complexity and flavor.
This wine should be opened a few hours before enjoying it. We recommended drinking it at a temperature between 16 and 18° Celsius. You can also age Côte du Jura Rouge for up to 50 or 60 years, perhaps even longer. But even when you decide to enjoy it in a timely manner: this wine harmonizes wonderfully with all sorts of sausage products, raclette, grilled meat, game, stews and casseroles, and couscous.
