The DuVallon absinthe is issued from a true family tradition. It represents without a doubt one of the best « bleues ».
Its home-made production comprises only products 100% natural. Moreover, even though the family recipe has evolved, the absinthe has stayed true to the tradition : powerfull flavours for a sensible taste.
A mixture of character and mellowness in an absinthe as traditionnal as can be !

- The DuVallon absinthe is distilled in the stills of the very famous François Besançon distillery.
- In September 2009, the DuVallon absinthe won the gold medal in a contest for local products with an almost perfect score : 19/20. The jury described it as being « Well-balanced. A fine product, intense on the palate. Leaves an agreable taste. Typical of a good absinthe. Well done ! »
- The distiller's daughter who designed this absinthe's beautiful label wished to become a « distilly » when she was 4 years old. (originally « distilette », in French)
It is in 1951 that the current distiller's father, nephew of La Malote - legendary clandestine female distiller of the region, started to distill illegally in Fleurier, in the Val-de-Travers, Switzerland.
M. Matthey-Claudet, a tinsmith in Môtiers had built his own still and had taught him the art of distillation. He then elaborated a recipe that gave a pretty white absinthe with a touch of the bitterness of grand wormwood – not too strong, flavoured by a few other herbs, carefully measured.
After that, Marta Charrère (the mother of the current distiller) was the one to be in charge of the distillation, the bottle filling and the delivery to the custommers. The distillation lasted over 40 years illegally.
In November 2005, JJC took over the distillation, legally this time, since absinthe was legalised in Switzerland on the 1. March that same year.
- At first, savour DuVallon without any sugar. Then according to your taste, add some eventually.
- For one measure of absinthe (3cl), add 2 to 5 measure of fresh water.

Added on the : 05/04/2020 EnglishAb-so-lutly nothing to complain about here. Great tasting la bleue! Very good wormwood, as well as fennel and aniseed. The aniseed is mild, but for a bleue absinthe that is not a problem. I love this absinthe, but think I prefer the Septante Seven because it's got a little more kick. You know those Big Hunk candy bars? There is a flaver that I can't identify that reminds me of a Big Hunk bar. It's a good flavor. I really dig this absinthe, and I believe that you will also be hard pressed to find anything negative about this absinthe that was made from an old family recipe. Go ahead and buy this, you will not regret it!

If, you pick one VDT La Bleue to sample, this should be it. Clean, pure, simple, and correct. Delicious, like everything from DuVallon.

I love this la bleue, as it is simply a pure a classic example of what a Swiss la bleue is supposed to be. I had a glass in 2010 from a different bottle, but this bottle from 2012 is sublime... perhaps it's just that my palate has changed, or it is from a different batch. (We all know that small-batch artisanal distillers have variations from batch to batch). I've compared this to all the other blanches I own, and it is simply put, the purest example of a delicate and delicious wormwood I've tasted in a blanche. There is a softness and clean edge to this, that is free of alcohol and any out of balance elements. Yes, there are la bleues out there (even from this maker) with more character and elements...Sevil for instance, but the purity in concept of this blanche is wonderful. The aroma is crisp and "alpine meadow," the flavor is clean and precise, and the finish is just strong enough to blend with the aroma and flavor in a correct manner, without betraying the gentle spirit of this absinthe. It builds gently and softly, lingers just long enough, then fades leaving a lasting impression of delicate flowers.
