Philippe Martin uses 10 different herbs for his La Bleue absinthes. Among these herbs are grand wormwood, petite wormwood, lemon balm, hyssop and peppermint. Most of the herbs have been cultivated in the Val-de-Travers, or even in the distillery's own garden. The distillery is situated in an old building in Boveresse that is known under the name "Maison des Chats", The House of Cats, a picturesque building with sculptures of cats on ledges, to be precise.
Francis Martin, the father of Philippe Martin was one of the very few underground distillers who distilled absinthe during the time of the absinthe ban in Switzerland. When absinthe was legalized in 2005, he received the authorization to legally produce absinthe. The original recipe from prohibition times is still used today by his son Philippe who took over the distillery in 2014.
- For one measure of absinthe (3cl), add 2 to 5 measures of fresh water.
The distillery of Philippe Martin is situated in Boveresse, in the Val-de-Travers, the birthplace of absinthe and today home to some of the finest absinthe distilleries.
Philippe Martin distills his absinthes in an old house known to locals as La Maison des Chats, a centuries-old building decorated with stone sculptures of cats. Right opposite is the distillery's own garden, where most of the herbs used for Philippe’s absinthe is cultivated.
Philippe took over the distillery from his father Francis Martin in 2014, who distilled for 33 years during the time of the absinthe ban in Switzerland. When absinthe was re-legalized in 2005, Francis received a licence to produce absinthe legally.
