- As it is a custom in the Czech Republic, the absinthe Bairnsfather Bitter contains only very little anise. That is why the addition of water provokes no louche action. It is also the reason why we classified this absinthe in the “anise free” category.
- The absinthe Bairnsfather is the subsitute of the absinthe Excelsior Edition Absinthe created by Mr Martin Sebor. The latter was never commercialised because of the loss of its creator.
The absinthe Bairnsfather Bitter is a continuation of the tradition and researches of Mr Martin Sebor (1954 – 2003), creator and distiller. It is made using only traditional methods and quality herbs; a procedure that has not changed throughout the years combined with modern equipments guarantee a high quality absinthe.
- At first, savour your Bairnsfather Bitter with half a piece of sugar. Then, add more or less, according to your taste.
- For one measure of absinthe (3cl), add 2 to measures of fresh water.

3 "double" shots, is a perfect buzz. 4, or more and it's blackout city: one is just as likely to get lucky, as get in a fight. regardless, a great time. every bottle has a story. sometimes, your ocifer du jour, will, too. great for fight clubs, temporary amnesia... that sorta thing. we've tried many brands, from many countries. this one's our fav, though there is something to be said for the ulex house's unlisted 300+mg... unlabled, rocket fuel! it's a shame this site doesn't put it on sale, but a couple times a year. I'd have ordered my seasonal 6 bottles, by now, if I'd seen, or heard of a deal on em, by now. looks like i won't be gettin em, for xmas, due to this... we'll see. just not worth my time to hunt for some "easter thing" ,AGAIN.

I don't see many good reviews of this absinthe, but it is one of my favorites. It is, as noted on the label, bitter. It is also made with the macerate so it is very much about the wormwood. She isn't the pretty girl in the room; she's the strong and capable one.

Finishing up a bottle of this at the moment, so I decided I might as well review it. I've ordered Bairnsfather before and I'll keep on buying it when funds are low. For the price to quantity ratio it's the best absinthe on the website. It's very bitter due to the wormwood, however complements the sweetness of prosecco very well. For wormwood lovers.

From looking around about absinthe, this is not entirely considered an absinthe by some (???). For whatever the reasons may be, Bairnsfather did teach me a few things and brought into focus a lot of interest.
First of all, FOLLOW DIRECTIONS. On the back of the bottle it says "enjoy with ice". I took this literally and the result was perfect. The drink slowly took a creamy louche and opened up. Adding cold water will not do it... ICE_
Secondly, it really gives you a taste of wormwood, which is bitter. But for a person that is into bitterness in drinks or foods (American IPAs, arugula in salads, etc.) this drink will really catch your attention. I really enjoy it because I enjoy bitterness and herbs in certain foods. This does not let you down at all and clings to the mouth.
With the addition of ice the body becomes creamy and quite nice. The sweetness also appears very nicely... almost as such when adding a bit of water or ice to scotch. It is a unique experience that I cannot help but revel in with the different take.
True absinthe or not, I would buy this again. I really enjoy it for what it is.

This is the only absinthe I buy anymore as it has the best 'absinthe/wormwood effect' in combination with the taste (tried about 16 different varieties). They used to make a low alcohol content Absinthe Abisinthe Amer (52 or 45??), but I can't seem to find it anymore, so now it's just Bairnsfather Bitter all the way! Also, as of right now, absinthes.com has the best price when you factor in the free shipping (speaking from the US).

I have to say this is a reorder each time. This is a great bitter and has less anise. If you put ice in your glass and pour the Bairnsfather in, watch it louche at the bottom of the glass and then pour ever so slowly your ice cold water. It is ready to enjoy. Repeat and enjoy again. BRAVO!!
