The Bourgeois distillery is located in Arçon, in France, not far from Pontarlier. The couple Arnaud and Anne-Sophie Bourgeois produces three absinthes in their organic distillery: two clear ones and one green absinthe.
They cultivate organic vegetables only and the herbs used for their absinthes are also from 100% organic farming. Among these are grande wormwood, petite wormwood, hyssop and fennel. They only buy the green anise from Mediterranean growing regions.
Arnaud Bourgeois opened his distillery in the beginning of 2015 and got some good tips from DuVallon. The labels were designed with the help of the artist Charles Belle.

Added on the : 23/12/2017 GermanHier für mich der zweite „Bio“ Absinthe, der „La Blanche“. Der Klare hat noch einen grünen Bruder (LA VERTE), auch aus dem Hause Bourgeois. Dieser hier hat ein paar Prozente weniger und ist mit 56% sehr mild. Optisch kommt er unspektakulär daher, etwas langweilig aber angemessen, schlicht. Er riecht pur sehr gut, blumig und lakritzig, auch leicht scharf in der Nase.
Geschmacklich ist er pur auch etwas aggressiver als erwartet , geht aber noch zu trinken und schmeckt primär nach Wermut und Fenchel, wenig Anis (wie angegeben). Er louchet sehr zügig zu einem weißen, feinen und absolut blickdichten Nebel. An der Oberfläche bilden sich feine Öltröpfchen (Wasser hat ca. 6°C), das sollte bei Eiswasser noch starker auftreten. Bitte niemals direkt Eiswürfel verwenden. Im Prinzip verfälscht man den Geschmack, wenn das Öl völlig ausflockt statt nur eine Emulsion zu bilden.
Auf der anderen Seite sind speziell die im Anis enthaltenden Öle für den Effekt verantwortlich, was dann wieder auf die „dominante Anisnote“ hoffen lässt.
Er riecht verdünnt ähnlich wie auch pur, etwas zarter natürlich. Mit Wasser verdünnt auch viel viel milder und prominent nach Anis, kaum bitter. Auch viel Fenchel vermag ich deutlich wahrzunehmen. Für Koriander brauch ich viel Fantasie und Ysop muss ich unbedingt mal irgendwie pur probieren, kann ich leider nicht beurteilen.
Das Ergebnis ist ein milder Absinthe mit prägnanter Anisnote und abgerundetem Fenchelanteil. Er ist sehr stimmig und gut. Solide 4 Sterne, da er meinen Geschmack trifft aber auch nicht so super speziell ist.
Zum „Bio“ Aspekt. Nett, dass dieser hier zertifiziert zu sein scheint. Aber als „Schuss ins Blaue“ würde ich sagen, dass wohl die meisten Absinthes den Biostandard erfüllen. Viele Hersteller besitzen einen eigenen Garten (z.B. Absinth des Chats – Herr Nebel verkauft seine Kräuter auch weiter – z.B. an La Valote Martin (ABSINTHE LA VALOTE MARTIN: LA GRENOUILLARDE)). Bei den Kleinproduktionen schätze und hoffe ich , wird es immer Bio sein.
