Les fils d'Emile Pernot distillery was founded in 1890 in Pontarlier, France, by Emile Pernot. In 1910, the distillery produced approximately 450 hectolitres, which is not surprising: around the time, consumption of absinthe was reaching levels never heard of before.
In 1915, when La Fée Verte (The Green Fairy) was banned, the distillery turned its hand to other spirits: aniseed aperitifs, fruit brandies and gentian liqueurs.
In 2001, the small distillery started to reproduce absinthe again, with Un Emile, from an old family recipe.
In 2005, the distillery was sold to François Thevenin, who has since developed the firm with a touch of modernity alongside traditional methods.
A year later, at the end of 2006, François Thevenin bought the Klainguer distillery, also situated in Pontarlier, and formed the Pernot – Klainguer distillery.
- At first, enjoy a glass of Absinthe Bourgeois with half a piece of sugar. For the next, add more or less according to taste.
- For one measure of absinthe (3cl), add 2 to 5 measures of fresh water.

Added on the : 14/07/2016 EnglishI can't disagree more with the 3 star review. This one here for a low proof absinthe is excellent. It may even be my favorite offering by EP. This may change once my bottle of Perroquet is cracked open and poured. But for now, I really love this stuff. So simple and plain, but yet full of flavor its just great. Everyone must try this. It is on my reorder list. Splendid.

Brought this home from Pontarlier 2012 after being part of the Jury that year. had a bit of a cold there so the tastebuds were not in the best shape. Still the absinthe has not really grown on me. Whenever Pernot launches something new, I am all ears and cravings, I think the have created some of the best absinthe-classics available in the modern era, so I always have high expectations. This absinthe is, however not the experience I have hoped for. It might be for a beginner, but I think I am a bit spoiled. The absinthe is not bad, not by any means, but it strikes me as an anonymous addition to the remaining and very interesting Pernot range. I´d rather stick with the Un Emile 68 or Berthe de Joux for the "light" experiences. Autentique, roquette, Vieux Pontarlier is way more special. I don´t feel it adds more to the range, but perhaps I need several tastings and to encounther how the absinthe is aging. Pernot never dissapoints. I recommend to try out the full range in a chronologial order before this one where I miss more character.

Sweet, beautifully balanced, slow louche, at 55% it doesn't possess the usual kick or fear factor for the less experienced drinkers. Ripper label too. Love it.
