Pastis d'Antan Combier is a traditional sugar-free pastis. This anise-flavored spirit contains many other plants and spices such as coriander, clove, cardamom, cinnamon and nutmeg.

Did you know?

Pastis (from Occitan pastís which means mash-up) is a traditional drink from the south of France. It is obtained by the maceration of numerous plants, such as liquorice and star anise, in pure spirit. A pastis without coloring agents will be a creamy-white to light green color (after serving with cool water). If the pastis contains caramel, it will have a yellowish-brown color.

This beverage was first commercialized in 1918 after the ban on absinthe in 1915. However, the designation “pastis” only appeared on the bottles in 1932.

Background

Pastis d'Antan is produced by the French distillery Combier in Saumur. Combier was originally founded as a confectionery company in 1834. However, the founder Jean-Baptiste Combier was already creating his own liqueurs in the back room, including the famous “Original Combier Triple Sec”.

Combier Master Distiller has kept this ancestral knowhow. Today the artisanal character of the products is much the same as 180 years ago. The oldest distillery of the Loire Valley continues to provide us with high-quality products.

Serving Suggestions

- Dilute Pastis d'Antan with cool water before drinking (6 to 10 volumes of water for 1 volume of pastis).
- As it does not contain any sugar, you can also add your own if you have a sweet tooth. A dash of sugar syrup does the trick, or you can use sugar cubes and water in much the same way as you would traditionally serve a glass of absinthe.

Jade Liqueurs & Combier, France

1834 :

Jean-Baptiste Combier, 25, opens the Combier-Destre candy store in Saumur together with his brother Claude. Thanks to an alembic installed in the back shop, he distils some liqueurs to fill his candies and chocolates with.

1848 :

J ean-Baptiste buys more alembics and establishes the Combier distillery on the rue Beaurepaire, where it still is located today. This is the starting point of a booming business, Combier now sells its liqueurs all over the world.

1861 :

Jean-Baptiste Combier's son James, only 19 years old, learns the art of distillation before traveling to England, Algeria, Italy, Greece and Egypt, from where he brings new essences and herbs for Combier Liqueurs.

Absinthe distillation at Combier :

Combier owns its own fields of 2 wormwood cultivars, harvested by hand and traditionally dried in an attic. There are 10 alembics from the 19th century in the distilling room, including 8 from Egrot (the famous maker of Pernod Fils alembics at the time).

This is a unique chance to try a pastis without sugar or to add some for personal taste. For me there was enough sweetness from star anise.
Pastis d'Antan has not so big "wow" factor as Henri Bardouin, because it is not so complex and it's color is hazy yellow, BUT it is the best pastis as aperitif. Greatly balanced and comparing to other pastises is less harsh and numb, almost not effecting the palates.
