Pastis (from Occitan pastís which means mash-up) is a traditional drink from the south of France. It is obtained by the maceration of numerous plants, such as liquorice and star anise, in pure spirit. A pastis without coloring agents will be a creamy-white to light green color (after serving with cool water). If the pastis contains caramel, it will have a yellowish-brown color.
This beverage was first commercialized in 1918 after the ban on absinthe in 1915. However, the designation “pastis” only appeared on the bottles in 1932.
Pastis d'Antan is produced by the French distillery Combier in Saumur. Combier was originally founded as a confectionery company in 1834. However, the founder Jean-Baptiste Combier was already creating his own liqueurs in the back room, including the famous “Original Combier Triple Sec”.
Combier Master Distiller has kept this ancestral knowhow. Today the artisanal character of the products is much the same as 180 years ago. The oldest distillery of the Loire Valley continues to provide us with high-quality products.
- Dilute Pastis d'Antan with cool water before drinking (6 to 10 volumes of water for 1 volume of pastis).
- As it does not contain any sugar, you can also add your own if you have a sweet tooth. A dash of sugar syrup does the trick, or you can use sugar cubes and water in much the same way as you would traditionally serve a glass of absinthe.

Pastis d'Antan has not so big "wow" factor as Henri Bardouin, because it is not so complex and it's color is hazy yellow, BUT it is the best pastis as aperitif. Greatly balanced and comparing to other pastises is less harsh and numb, almost not effecting the palates.
