Eichelberger 68 Limitée was the winner of a contest organized by a German absinthe forum (Absinth-Guide). Wanting to improve the image of German absinthes, fifteen members of the forum developed quality distilled absinthes. The winning recipe was Michal Weinzierl's, and just 60 bottles of this delicious distillate were made. It was so popular, that the eichelberger distillery decided to incorporate it into their range of products.
Michael Weinzierl, the creator of the recipe for the Eichelberger 68 absinthe, chose the Eichelberger distillery because it was close to his home town. It is a family distillery that is run by Lili and Rudolf Wild.
In 2005, they started the production of the first authentic German absinthe. Five quality absinthes followed the first one: Eichelberger 58 Blanche, Eichelberger 60 Verte, Eichelberger 70 Verte, Eichelberger 70 Classic and Eichelberger 80 Brute.
- At first, savour Eichelberger 68 Limitée with half a piece of sugar. Then, add more or less according to your taste.
- For one measure of absinthe (3cl), add 2 to 5 measures of fresh water.
The Eichelberger Distillery is located in the southeast of Germany, in the forested Bavarian region called “Oberpfälzer Seenland”. The distillery is a family business, and developed from a hobby to a serious enterprise. Dr. Lili and Rudi Wild, married for a long time, followed their dream and opened a small distillery.
It is quite modern, and capable of distilling just 30 liters at a time, but the couple always pay attention to the quality of their results. The Wilds are passionate advocates of fine liqueurs and eau-de-vies, and were enthusiastic when approached with the idea of making a ‘specialist's' absinthe under their distillery's name, which has now become the first modern, yet traditionally distilled German absinthe: The Absinthe Eichelberger.

This was my first German absinthe, and it's not bad, but not great either.
I would say it's more yellowish than green, nothing wrong about that, just an observation I did.
The louche is creamy white with a beige tint to it, looks quite nice.
Tastewise it is a rather light absinthe, with not much anise and a hint of bitterness in the finnish.
It needs no sugar in my opinion.
Not oily at all, but leaves a soft numbness on the tongue for a couple of minutes.
It´s nothing near the great French and Swiss vertes, but not bad at all.
With it's mild taste this is a good absinthe for beginners. But a bit too light for me.

This the first "real" Absinthe that I have ever purchased. And by real, I mean no artificial colourants or flavourings. What can I say? My world is forever changed:
Appearance:
Colour: A gentle green, with a dash of amber. Clear no haze.
Louche:
Steady, smoky trials descending into the depths then, a sudden storm of washing thick green fog explodes into the glass.
Aroma:
For its strength, there really wasn't a big alcohol nose on this one. Notes of grand wormwood, a very fresh and well balanced fennel/aniseed presence... and.. a freshness that will leave you guessing till you taste it. This "freshness" is there very delicately in the distance. It adds complexity, wonderment... lust.
Flavour & Mouthfeel:
Smooth and creamy, it dances over your tongue like silk, leaving a pleasant dull numbness in its wake. A spectacular, well choreographed performance between the wormwood, aniseed and fennel. A gentle bitterness ever present. First the anise welcomes you in, the wormwood takes your coat, and the fennel giving you a refreshing and clean embrace. Then begins the complexity. A delicately peppery citrus cuts through the mix, and takes you out to fresh spring air. That would be the mellisa in perfect harmony with some kinda of citrus element. Interesting, refreshing... cleverly complex.
Finish:
The mellisa note rings out along side a firm wormwood chime. The gentle numbness remains. No overbearingly strong flavours, only the desire to feel loving embrace again.
I tasted my glass initially with 2 lumps of sugar to a 1/4 ratio. Immediately regretted the second sugar lump, as the complex citrus adds, in my opinion, a decent amount of sweetness.
Very impressed by this small distillery's output, would HIGHLY recommend, can't wait to try the rest of the Eichelberger family!

More bitter than Brut, oddly enough, and found it best at 3:1 mix with sugar cube. Has a distinct wormwood flavour. Moderate louche. Certainly unique, but not my favourite.
