Its deep dark color already hints at the quality before the beautiful fragrance of this Peruvian bitter hits the nose.
It is an absolutely exceptional aromatic bitter that would compliment many cocktails; not just the Pisco Sour, the national drink of Peru and Chile.
The Amargo Chuncho bitters are especially befitting to experiment and offer an exotic and somewhat less bitter alternative to the bitters from Angostura & Co.
PISCO SOUR
10 cl Pisco
3cl Green Lemon juice
1cl Simple syrup
1 egg white
few drops of Amargo Chuncho or Angostura Bitters.
Method: Add all ingredients into a shaker with ice. Stir until cold and mixed thoroughly, then strain into a glass.
The name Amargo Chuncho comes from the Spanish and can be loosely translated as 'Chuncho-Bitters'. The Chunchos are an indigenous folk from the rainforest region in what is today Peru.
In 1890, when the importing of Angostura to Peru was blocked, a certain Castillo Estrada decided to find a replacement for this aromatic bitters. So he began collecting different ingredients that he could find in the Peruvian Amazon and developed the Amargo Chuncho.
Today these aromatic bitters are produced in Lima and, because of their unique origins, are an exceptionally unique product available for purchase in our catalogue.
Amargo Chuncho bitters are produced with over 30 different types of leaves, flowers, herbs, fruit peels and rinds, and spices from the Amazon and neighboring regions. The recipe is naturally a secret, but it is known that sources such as the tonka tree (dipteryx), caramel, cardamom, cloves, quinoa, and cinnamon serve as ingredients.
Otherwise the mixture is stored in wooden kegs to ripen for six months, before it reaches the 40% ABV when it is bottled. The Amargo Chuncho takes its name from an ethnic group of Amazon Indians that resisted the Spanish Conquistadors.
It is commonly used is in cocktails like in the well known Pisco Sour, but it can also be used across all areas of cooking.
Perfect to boost up your cocktails or spicy up your meals. It's also a key ingredient to prepare an original Pisco Sour.
