Armagnac's inherent style is clearly apparent after 40 years of ageing.
The quality of the oak used in the ageing process is very important, since the correct oak tones will bring complexity and finesse to the Armagnac; the wooden character of the aroma and flavor become apparent after 40 years of staying in contact with the wood.
With the history of Armagnac production spanning centuries, the history of the producer Francis Darroze S.A. is relatively young.With the center of production in Roquefort, Darroze produces one of the top armagnacs today.
Founded in 1974, the firm doesn't operate their own wine production, but rather cooperates with about 30 relatively small wine producers.
When creating a new Armagnac blend, the Master Blender carefully considers what they want to achieve; in particular the specific aromas, flavors, and hue desired in the final in the final Armagnac. With these aims in mind, the Master Blender uses their deep knowledge of the grape harvest from different years, and the unique particularities of each distillery in the region - something which can only be gained from years of experience - to select vintages from producers all across the region.
The Master Blender then skilfully mixes these chosen Armagnacs, finding the perfect quantities of each needed to achieve a final bottling embodying all the special characteristics desired.
The Grands Assemblages series has been created exactly in this time-honored way. A particular highlight among them are the Grand Crus, originating in Bas Armagnac: widely considered to be the best growing region.
