The Septante 7 is one of the strongest Swiss absinthe from the Val-de-Travers.

What makes this absinthe so intriguing is that although it has a very high abv, its taste os surprisingly well balanced. The Septante 7 Absinthe is aromatic, refreshing and strong at the same time. This recipe was first used by the founder of the Bovet distillery, Willy Bovet. He taught his daughter who now runs the business, how to make this special absinthe.

Aniseed and wormwood are the two dominant herbs in the Septante 7.

The Bovet distillery makes six different types of absinthe, and only one among of them is green. The other five brands are classic Swiss Bleues (clear absinthes).

Background

The Bovet family distillery originated from a former collective of three distillers that founded the „La Valote“ distillery shortly after the ban on absinthe was lifted in 2005. Back then, the large amounts of paperwork and required permits in order to obtain a license were easier to work through as a team. Later, when absinthe became more and more popular, the three distillers split and founded their own family distilleries. However, the heritage of the former collective can still be found in all of the three distillery names: La Valote Bovet, La Valote Martin, and La Valote Fornoni.

Serving Suggestions

- At first, savour Septante 7 without any sugar. Then according to your taste, add some eventually.

- For one measure of absinthe (3cl), add 2 to 5 measure of fresh water.

La Valote Bovet, Switzerland

Willy Bovet, founder of the Bovet family distillery, was a former watchmaker from the Val-de-Travers, where absinthe was invented. After absinthe was declared legal again in 2005, Mr Bovet and two other absinthe distillers founded the collective “La Valote” distillery. They split up later and separated into three individual, family-run distilleries.

The Bovet distillery is located in Môtiers, home to many distilleries before the absinthe prohibition in 1910. To this day, all Bovet absinthes are handmade according to historic recipes and distillation techniques. Starting with the cultivation of herbs, the drying and cutting, maceration and distillation, up until the final coloration step. The passion for absinthe and the skills obtained by the Bovet family that are being passed onto each new generation – this makes these absinthes what one calls a “classic Swiss Bleue”: refreshing and strong on aniseed!

Robert Bobillier, a former clandestine absinthe distiller taught Willy Bovet the art of absinthe distilling and herb cultivation. He passed his knowledge onto his daughter Francoise, who runs the distillery since 2018.

Very Fine Absinthe. Arrived on time and nicely packed. This stuff is nice; Strong, clean, bright Anise flavor. Creamy Louche and good with or without sugar. No extra turnoff flavors just nice alcohol spirit base and distilled wormwood. No nonsense 77. Buy it if you are a simple confident drinker.

This is a great bleue absinthe from Val-de-Travers. It has a very well balanced flavor profile for such a high abv. The wormwood is the taste that stands out the most, with very little aniseed and fennel up front. Though it is there, the licorice taste is not as noticeable as in vertes or other bleues. Very good taste all around. I highly recommend trying this at least once, I think most will agree that this is a top quality absinthe.

This is a great bleue absinthe from Val-de-Travers. It has a very well balanced flavor profile for such a high abv. This is one of my favorite Val de Travers absinthes and in my opinion the best product from Valote. Highly recommended - especially for absintheurs that are already familiar with distilleries Clandestine and La P´tite.
Whereas the typical Val de Travers absinthe is very floral and fresh, this has more complexity and earthyness, perhaps from angelica root. It is quite herbal and complex and very intense. Perfect for a strong dilution with an icecube added for sipping. I think they should work on the label, but there is a certain charm to the graphical VdT-style. A "must try before you die - absinthe".
